Temp control question

I got a maverick 733 for Xmas and cooked a brisket on New Years. I was trying to cook at 250 but temp was all over. I set alarms at 235 and 265 and they were constantly going off and I was making adjustments. Drove me crazy, and brisket ended up too dry. Prob not related but still added to frustration of days cook.I am thinking I am ready to step up and get a stoker or comparable for less hassle. I know it holds temp better at 275 or so but don't always want to be that high. I guess I did not realize how much I was away from target temp until I got the maverick. Also found dome gauge was 20f low after seeing mismatch with maverick and calibrated. Question is if I get a stoker do I still need the maverick or can I return and apply towards stoker? Is stoker too cumbersome for use as just a temp monitor? Can I use my iPhone to be similar as the maverick set up?

    I might be the only one here. Get rid of all that crap and just cook...... All of it.......... I have owned it all and gave away it all..... Now much happier Egger \:D/ No Wire Cooking Ever.....
    Salado TX & 30A  FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given a Mini to add to the herd. 

  • Start low, shut down before you hit the target temp, don't adjust too much. I set mine for 200 and 275 for a 225 cook. It will fluctuate, but it should stay roughly within those temps. If it goes to 290 or so I don't sweat it. At 300 I will do a very minor adjustment. At 200 I'm worried about my fire and I usually take a look.

    Your limits are too close. Set them +- 50 and go away. It's gonna fluctuate and a little don't hurt.

    or throw it all away like @Mickey‌ I'm not to that point yet, but I'm not shelling out for a controller. I can cook at 275 just as easy as 225 only faster.

    Return the maverick after you used it??? You'll get better with the temps.

    Stoker. Done. Will control it beautifully on a long L&S and I have maintained as low as 110% for giggles and grins. The ham I ranged 175℉-190℉ with no issue. And the Stoker can control multiple cookers. Well worth the juice IMHO.

    I gave a Mav. Almost never use it. The Mav doesn't control anything. It just sounds an alarm if you are outside your parameters.

    I do use a digiQ, but only with low and slo cooks (maybe 2-3 times a year... used to be more). Was never interested in a stoker. Remote control/monitoring is worthless to me.

    If I had it to do again, I'm with Mickey.

    I hate it when I go to the kitchen for food and all I find are ingredients!

    I only use my Mav and PartyQ on low and slows, such as pork butts and briskets. I use them in combination with each other. The temps are always different and I don't let it worry me. The beauty of the Mav is that it warns you if something goes crazy. The PartyQ is a very simple controller and it's all you need if you have a Mav. I find these tools help me get a good nights sleep and they have been reliable.

    I like the Florida slang. A guy just doesn't hear "the juice was worth the squeeze", in Wyoming.
