Went on at 5:15am. We've already planned a dinner for tonight. This more than likely will be tomorrow's lunch and dinner.
On the EGG prep I used the electric starter and left in for about 8 minutes. It got the lump lit pretty good and had a couple flames creep out the top of the lump. It seemed to work pretty good this time. I've had a couple of the back draft issues happen on me and it seemed to happen if i pulled starter to quick. I think it's back draft..I'll hear a woosh sound then the smoke instantly stops, poof out the bottom and then heat will blast from 250 on the dome to over 600 in a very fast motion. I usually throw the cap on and close bottom. Then I cautiously start opening slowly after temp comes back down.
All safe on this light up though. -
Good luck on that but. I have a medium also. I had to purchase 2 - 5 pounders for my last cook, they didn't have anything bigger than 6 or 7 pounds. Found a 11.5 lb. butt on sale for $18 a couple of days ago. Swooshed that thing up and got it in the freezer. I think I would rather do one big one than the 2 smaller ones.
They sure do make some good eating. I noticed all your wood on top of the lump. I have started burying mine way down in the lump. I think it keeps the wood from burning off at the start, eliminates some of the early smoke, and makes the wood last longer through the cook. Just my $.02 FWIW.
Always glad to see new posters on here. Pushes me a little farther up from being the new kid on the block.

I actually have chips sprinkled in 3 layers and have 4 other chunks buried in the lump. Hickory and cherry..that's all i had. Wally world was out and didn't feel like going to BPS or Cabelas to get wood. But I will soon. Need to stock back up. -

11 hrs cook time. Pulled off at 198. Meat probe would practically fall in by itself and I grabbed the bone and gave it a slight twist and it started turning. FTC right now. Appears to be some lump left =D>

Good looking butt. I like it when some sticks to the grate. Gives me a good excuse to eat some early. But it sure makes it hard to keep from slicing off a hunk and digging in. keep those pics coming, you're off to a great start.
