3" Rib Eye Reverse Sear?

Got Bone in Rib Eye and sliced. Ended up with 3" Fred Flintstone Steaks,
Going indirect about 300 then planning on searing at about 500.
Does this sound right? This has to be a hit as I am already getting looks as if, well you know the rest.
Any suggestion??????

Sounds like a plan. Salt them at least an hour ahead of time if you can.

I'm doing this tonight as well, pretty much same exact plan except I do the indirect around 250 and sear in really hot CI. Mine is only a 2.5 inch bone in ribeye though. Jealous.In Manchester, TNVol For Life!

I'd sear on the pan. 500 and slather the steaks with butter...turn every 30-45 seconds till 10 below your target temperature.Green egg, dead animal and alcohol. The "Boro".. TN

Cooked a bunch of rib-eyes already on the new egg but haven't done indirect. At what IT are you pulling the steaks before finishing up with the sear? Or are you searing them first and then going indirect and pulling at your desired IT?Is the taste that much better going indirect than direct?

Indirect first then sear, pulled at 115, pulled the platesetter then seared at 550

You can also do them raised direct and then lower them for a sear at a higher temp.Dave - Austin, TX
