Hey, it is your roast…both will work, the indirect is waaaay safer and you will still get decent bark. I bet you end up with a great meal either way! Sounds like you are on your way to a great cook…Merry Christmas!LBGE

I seared it at 550 right on the fire. I can see what you mean with a fireball. I kept it under control. I ended up cooking a hair further than I normally would due to the crowd requesting a more medium cook. Pull at 115, sear for 90 seconds each side, and tent until dead middle reads 130...ends read 140-144. You can see the difference. Also had the edges done all the way around a little more than my liking, but the flavor was outstanding!!!! Will definitely be doing again!!

I did one last year, and doing another this year (7 ribs 15.5 lb) 225 indirect, reverse sear. I'm estimating 3 hours. Last years was a huge hit!

We did one tonight at my in-laws too. 7.75 lbs done at 250. Reverse seared it and ended up right at 130 in the center. Next time, I'll pull it off a little sooner. It was still a hit. Seasoned with Mrs. O'Leary's Cow Crust and it was fantastic. Forgot to take some photos as it has been a very long day.L x2, M, S, Mini and a Blackstone 36. She says I have enough now....eggAddict from MN!

You guys should have seen the faces of the family looking through the glass at the sear. It stayed together well, but I could have seared a little bit longer. Too bad there was a fire going. To hell with the spatula and tongs...the welding gloves made it happen!!!
