First Pork Butt on the Egg

I've had my Egg for about 6mos now, but I had yet to do a pork butt. I decided to do one during the first snow of the season here in the Ocean State. I wish I hadn't waited so long - it was awesome. I mixed a quick rub, heavy on the maple sugar and liberally seasoned the small butt (about 3.5lbs). It ended up taking about 7.5hrs at 250 to get it up to 195. I was surprised it took so long, but man was it worth it! And my Weber turned Egg table was a great rack for my HeaterMeter...

    Then let me to be the first to congratulate you.  They do taste good don't they? 

    Looks like a virgin plate setter ... first time with it?  The picture where you're wired up to the egg, it wasn't lit was it?  No cap and an inch plus bottom vent opening would yield about 400 plus degrees on my large.

  • Nah - been using the platesetter a bunch but just cleaned it along with my oven; I'd used it a bunch before realizing I needed to use a drip pan. Now it's good as new and being used almost exclusively with a drip pan!

    The egg WAS lit in the picture you mentioned, but I was still letting the VOCs cook off a bit at that point; shortly thereafter, I brought it back to where there was just about a sliver of vent showing. Otherwise, mine would be cranking just like yours!

  • I would wrap that plate setter in foil to save some cleaning later. nice cook. unbelievable how much moisture is in a nice pork butt

    I am a little behind on my responses, but my Weber egg table works well too!  Funny how great minds think alike!  It also can be a hand warmer on cold winter cooks!  Enjoy!
