Cooler Resting Times

Cooking lunch for 11 at work tomorrow. Doing a few Salmon steaks and a tri tip. My thought was to cook both to an internal temp of 115, foil, wrap in towels and toss into the Yeti. They would be in the cooler resting for about 5 hours. Sound about right or am I way off the mark? Thanks!

    I don't think you can FTC those low temp cooks without issues. Recommended min food temp for keeping something safe for a period of time is 140 degrees F. I'm sure there are scientists here that can share more insight.

    If you want something that can keep in FTC for hours, you may want to try a pork butt or a brisket.

    115 is low for an office party even if cooking fresh on the spot. Most of my non Egging friends are Med Rare at best.

    Also, nothing wrong with serving cold. Salmon is great in a salad and Tri-Tip sliced thin on a Hawaiian Roll with some spicy Mayo and good shredded cheese is a real winner.
    It will be cold very soon after you take it out of the cooler any way.

    Warming up the food for 30 minutes after a 4 1/2 hour rest does not make it safe to eat.
    Cooking to 115 just makes it an ideal breading ground for your 4 hour rest.
    Now cooking with high heat, to reach your 115, you will have a nice carry over that will get you closer to safe temps.
    Then again, maybe you don't like you co-workers. lol

    I so wish we had a oven at work to reheat…
    picked up one of the Anova Sous Vides on sale and it works well to warm things up w/o drying out.
