California pizza stones

Any wizards out the familiar with this outfit?

Thinking 18-21" er any xl users use 21"?
I also need a good hand tossed chewy crust recipe. I've been told by some pizza guys gluten is the chewyness.
Any help would be appreciated...thx

    I use a 16" kiln shelf in my XLBGE. 
    Consider that you want to raise the stone up into the dome. I'm usually 4" to 5" above the felt when baking pizza. 21" is too big IMHO. I'd say 18" max. :)

  • I have a 19" Cal stone for use in my Big Joe. Can't help you with the dough recipe (not my dept) but the stone is awesome.
    When I'm not Eggin', I'm scootin'   Eggin' and 'cueing from Temecula Ca; an hour from San Diego, an hour and five minutes from Palm Springs, and an hour and a half from Los Angeles (yeah, right. With THAT traffic?)

    I use the XL BGE stone and raise it into the dome ~ 4" above felt line and it fits. Not sure of the diameter.

    I suck at baking & making dough so I just buy it. However, I think someone posted a secret dough recipe in another thread yesterday.

    I got the book "Flour Water Salt Yeast" on recommendation from someone here on the forum, and I'm glad I did. Lots of recipes, and better yet, advice on methods, tools, etc.

    At the basic level, kamodo cookers are a culinary adaptation of kiln technology.  Platesetters are kiln furniture that didn't even change its name when adapted for use in BGEs. Kiln shelves got renamed as pizza stones when brought into the culinary world. A good Corderite kiln shelf will work just fine as a pizza stone.

    The price was right, but shipping is a bit steep, but it arrived well packed & in a reasonable time frame.

    @AUCE, I seem to recall $20 for the kiln shelf and around $15 to ship. But it's less $$ than most 16inchers and it works great! I'm a satisfied kiln shelf owner. ;)
