Curly tail spares..Adam wished he had these ribs..

Putting on curlytail spare ribs today about 10 ish for a low slow 200 + degree 6 hr.with my homemade secret rub and my Makers Mark aka "Mothers milk" bourbon bbq sauce. My bourbon of choice....Ill also be imbibing in copious amounts of MM to ensure I'm of the frame of mind that should "Eve" show up I can defend my ribs accordingly. Prefer the spares over babies...mo meat and flavor.......Been making this rub and sauce for a long time and haven't found anything better.....ribs prepped and stripped of membrane last night for a good 12 hr soak in the rub..spicey and flavorful........first time on my new xl BGE...maybe momma will forgive my bge sins now..lol..Gonna have to get her primed on a rum runner or 4.
Will be placing a drip pan full of water and a 2# bag of 1/4 sliced lengthwise carrots under for the full cook....might need to add more water later..something bout those smoked bunny bites....
Will also be cooking my Slap yo momma onions..whole peeled sweet onions ends sliced off. Core deep enough for a beef bullion cube and a couple pats of butter. Dont core all the way through. Lil bit of rub and wrap with foil so you have a 6" chimney over the onion when setting on grill. Nice handles to pull em off with..Don't wrap too tight or all the liquid will squeeze out. Chimney allows for the boiling. Gonna be on for full cook also.

I would much rather be able to say I was glad I did than wished I had........
