"Fried" fish

JennQ, I think you will like the results. Try getting some of that Reynolds aluminum grill sheets. Basically they are heavy duty aluminum foil with holes puched throughout. Prepare the fish as the recipe calls for "oven fried" and just plac ein the EGG on these sheets. No flipping, just pull the sheets onto a platter when done. If you spray the sheets with some olive oil before placing the fish on top they will slide right off. If not, it may stick a bit but still will be great.

Glad you asked. We had "fried" tilapia off our large BGE for dinner last night. Ken uses a cast iron griddle, with a good dose of oil. He dredges the filets in flour and lets them sit for a bit. Then comes the egg and milk wash, followed by panko crumbs. He discovered we were out of panko last night, so he used cracker crumbs instead. We liked it almost as much as the panko.[p]I am picky about the fish I eat, but I LOVE tilapia done this way. [p]Hope this helps![p]Diana
