Spatchcock help please

I have never cooked a chicken on my egg, much less spatchcocked  one.  Does someone have some links saved that detail how to prepare a chicken to spatchcock and how to cook.  No need to explain the whole process, just post  a link please.  Or if  you want to type it all again, that's fine too.  Searching for spatchcock chicken returns too many hits to wade through them all.   Thanks.

  • Cut out the backbone, flip over, give one quick CPR thrust on the breast to break the breast bone and flatten. I like to dry on a rack in the fridge overnight. Give it a rub of your choice and cook raised direct at 400 for about an hour. Point legs to the back. Cook to155-160 in the breast.

    I am a minimalist, I will tell you my simple method in as few words possible.
    Cut out backbone, flatten.
    Add rub, dust with cornstarch
    Raised direct at 375-400F until breast temp is minimum 165F, (I have actually taken them higher,I enjoy overcooked chicken

  • Thanks folks.  Another question.  I have a medium with original grid and I now have a cast grid also.  How can I set up raised direct?  Place one grid on the lower ring, use some sort of spacers to raise the other grid to top of lower half?

    Yep, empty beer cans work just fine. Or fire bricks. But 3 empty beer cans are more fun to get to.

  • Damn, I think my cans are all full.  Guess I'll have to turn em up and drink em down for the sake of the cook.  That'll make for some tuff prep work.

    I'm not bashing the raised direct, but it is not necessary. You can just put the bird on the grid if you want. Enjoy.

    I have been trying to take pics of my cooks, but gotta tell ya, this old brain of mine is having a hard time remembering to catch the various stages.  Invariably, I will get in a hurry and forget. When I'm hungry (and I usually am), I often forget to take the finished pics, just put the meat out and start eating.

    I may buy a chicken this afternoon to have sometime this weekend.  You guys make it sound easy and mighty tasty. Plus chicken is relatively cheap. And with the need to down 3 beers per cook to use the cans to raise the grid, well, chicken is looking better all the time.

    @FarmerTom‌, believe it or not, my food taste so much better when I take time to plate it and take a minute to enjoy my accomplishment. I think that saying "we taste with our eyes first" actually works.

    @FarmerTom - I would recommend putting down the kitchen shears before you get to that third can!
