21lb spatchcock turkey

Guys, i didn't intend to buy such a large turkey, but the wife took it upon herself to purchase this beast of a bird!  I have mastered the spatchcock chicken on the BGE, so I am going at it with the Turkey....

The plan is to cook direct @ 350.  How long do you expect this 21 lber to take????

    You can find plenty of turkey roasting times on the net, so go look for that to be sure. Most charts give cooking times at 325 degrees, stuffed and unstuffed. I think spatchcock turkeys will be a shorter cooking time, plus you want to cook hotter.

    @Brianj5685-Great job to get a 21lb spatch turkey on the LBGE.  Once I get to around 18lbs I use an inverted V rack and if SWMBO rolls in with something in the low 20's  I go traditional.  Now Aa bit of data-Running raised direct at about 350*F on the calibrated dome you can expect around 120-145 Mins or so.  Just watch the internal temp and have a great Thanksgiving.  YMMV-
