I've got a 12 pound turkey. Thinking 4-5 hours at 275-300. Is that about right?

I just used his recipe, iced the breast and cooked at 325-350. My breast cooked much quicker than the thigh. 3.5 hours the breast was 178 and thigh 165. I think I fubared this one, should have iced longer.

My 15.7-lb turkey, following Mad Max's recipe, has been on for about 3 hours at 275. Breast temp is almost 140 F. I'm not eating for another 3 hours, so I turned the BGE down to around 225, but it's tough to hold the temperature that low. I guess I'm just worried it'll be done too early, but I can FTC at the end...LBGE | CyberQ | Adjustable Rig | SmokeWare Cap | Kick Ash Basket | Table Build | Tampa, FL
