Spatchcock Turkey Trial Run

My mom always does turkey for Thanksgiving (and will again this year), but with the success I've had with Spatchcock chicken I decided to give a turkey a try.  Set the egg up for a raised direct 375-85 cook.  Spatchcocked the turkey, rubbed with Dukes mayo and Ployboy's rub.  Put it on the egg (legs facing the hinges) and added a handful of cherry chips.  Checked an hour later and the temps were around 140 breast, 155 thighs.  Let it go another 15 minutes and the temps were 164 breast, 185 thighs. Pulled and foiled for another 40 minutes.  Very happy with the outcome - meat was moist and the skin was fairly crispy.  My son asked me to do this again tomorrow!  Looks like we will have a 2 turkey Thanksgiving :)
