Salmon...off the hook

Got home from work tonight and grilled up some salmon. The piece was frozen when I left this morning but I tossed it in brine and then in the fridge. Got home and rubbed some BGE Kodiak River on it and cooked it raised direct until it hit 138IT. Then I let it rest for a couple of minutes. It was by far the best salmon that I have ever cooked. A couple of weeks ago I bought the thermapop and have used it ever since. Before I was guessing if food was done and overshot everything just to make sure it was done. Now that I'm hitting temps food is consistently moist and flavorful. If you don't have an instant read thermometer (pen, pop, or whatever else is out there) do yourself a favor and get one. It will take your cooking to the next level. Also had a nice side salad and a mix of broccoli and cauliflower. Definitely have a happy wife tonight. imageimage
