Sounds really good, and really easy. Do you know how much salt she adds?? I assume she grinds some pepper in there too, eh? Any herbs? Seems like a good place for a little rub maybe?[p]Thanks mang. Will grind some fresh beef for it me thinks.

chris, i don't think the spawn adds any salt or pepper. . .i think a nice shake of cowlick would make for fantastic meatloaf, but you know my daughter, she is set in her ways and she is the official meatloaf maker in our house. .. the canned italian bread crumbs have some herbs already mixed in. ... [p]hey, its a basic recipe, you have the palate for this sort of thing, i'm sure you could add, in addition to some cowlick, some other stuff from your herb shelf to jazz it up a little. ..also, you know what mom probably likes/dislikes in that regard. ..if it were me, i might add a little herbs de provence, only cause that is my favorite herb mix ...

I learned a great trick for making the crunchy topping for the dish. Every time i try to mix bread crumbs with melted butter I end up with mushy crap that is hard to work with. Instead put torn pieces of bread and cold pats of butter in the food processor amd pulse until you have crumbs. This cuts the butter into the crumbs very nicely making an easy to sprinkle on topping. -RP

Thanks a lot. That is a great idea. I have a several year old foodsaver, and will have to look and see if there is a way to seal in the middle of a bag to partition it.[p]Thanks again

Chris;[p]Another thing to think about is breakfast. We have an omelette cooking method that we use for camping all the time, but it would probably work for your Mom.
Basically you crack two eggs into a quart size Ziploc freezer bag (a Foodsaver bag would work great too), and then you add all of the stuff she would like in an omelette (ham, cheese...etc). Squish it all around to mix, and then you put the bag into a pot of boiling water. After 13 minutes, pull out the bag & open it, and out rolls a yummy omelette! I imagine you could make up a bunch of bags ahead of time - I'm not sure how long they would last in the frig, but I bet you could make a week's worth.[p]I will try to come up with some main dishes in a bit.

Nature Boy,[p]Cut a 10" long section of bag, instead of sealing one end to make one bag, seal it in the middle. Now you have two bags that share a common seal.[p]~thirdeye~

Nature Boy,[p]2 cups cooked chicken
3/4 cup rice
1 1/2 cup water
10 oz frozen broccoli or 1 head fresh
1/2 cup chopped onion
2 T butter
1 8oz jar cheeze whiz
1 can cream of chicken soup
1/4 cup milk
salt
pepper
garlic[p]The chicken is typically boiled but I think frilling it would impart a great flavor.[p]Brown the diced onions in the butter.
Steam the broccoli.[p]Combine all ingredients after chicken, onions and broccoli are cooked. Place in caserole dish cook at 350 for an hour.[p]For some extra goodness, smash up some ritz crackers and mix with some melted butter and place on top of the caserole about half way through.[p]It's one of my mother-in-laws recipes, I think, it sure is good, one of my favorites. You may even want to bake it in the egg. The smokey flavor might do it good. I think I may just have to do this on the egg.[p]Joe

Chris[p]I made a mistake.[p]You are supposed to cook the rice and broccoli together. If you put raw rice in the caserole, you'll get raw rice when its done baking. Sorry dude.
