Suggestions for meal prep please

Howdy yall.
I could use some idears here. I want to take a bunch of prepared food out to my Mom this week. She doesn't much feel like cooking, so I was thinking I could prepare several dishes, and vacuum seal single servings that she could thaw and plop in a pot of boiling water to reheat. [p]A couple things came to mind....some chicken breast rolls with shrooms and cheese (and/or spinach etc.). Cook em up then cut into single servings and seal away. Maybe I icould seal a scoop of cooked rice into the bag? Rolled flank steak maybe. Also, I was thinking maybe a hearty chicken chili, some stroganoff with noodles....that kinda thing. She likes comfort food. But I am drawing blanks where I should have idears.[p]Anyone feel creative today?

Nature Boy,[p]lasagna. ..cook in advance, cool, cut into squares and seal and freeze[p]stew[p]mac and cheese[p]any kind of casserole (tuna noodle, chicken noodle, etc)[p]any of these could be set up as single servings, sealed and frozen, then just microwave or heat up in hot water, cut the bag and serve. .. .[p]

Stuffed Peppers and Meatloaf come to mind. Also, give her some of her own medicine… Chicken Soup. Freeze all as single servings and all will be well.[p]Hope this helps,

You can't go wrong with stuffed/rolled chicken breasts cut into portions. I pound out some breasts then put a piece of cheese and some proscuitto and wrap. They reheat great. LOL, Tom

Is she doing chemo? She may not want a lot of rich or spicy food.[p]I did some rice with a little onion and small pieces of chicken for a neighbor who was going through chemo and he thought they were just right. I froze them in a large miffin tin just the right size for a little bit of food then I sealed them in the FoodSaver. The other variation was with bits of ham or pork. He also liked pulled pork in very small amounts. Said it tasted good and a little went a long way, for him. Of course, there's the old brownie with a small dose of herb in it - just kidding. Tell her Gayle and I are including her in our thought. I'm sure she'll be happy with anything you bring including the girls.

Nature Boy, Does see like soups? I've stockpiled a variety of soups I've made and frozen in Food Saver bags. Talk about convenience food - just plop a frozen bag in a pot of water - boil and cut bag open and enjoy. My stash ranges from clear soups to hearty ones that you can stand a spoon up in.

i like soups this time of year, maybe a portuguese kale soup with a little bit of linguica, kale, white beans, potatoes, and lots of broth made from a ham bone. i like these soups best without a lot in it.serve with white bread and butter. ice cream bread would be good to make toast out of in the mornings

Clay-Q's lemon chicken (boneless breasts) went a long way for a neighbor who was going through tuff stuff. She used half breasts with a little of the rice for meals and really liked the flavor of the chicken in chicken salad. The lemon aroma and taste appealed to her when she wasn't feeling very peppy. Meatloaf. Yeah baby. That sounds great. Mom always made a fairly conservative ground beef meatloaf with ketchup....any favorite meatloaf recipe that is not too crazy?? Been wanting to try Cat's, but that might be a little adventurous.

Nature Boy,[p]I liked to cook up a big pot of soup and then vacuum seal it... I would put the finished soup into plastic containers and freeze the soup to that shape. (Just make sure that the shape you use fits into a soup pot). Once frozen, pop the chunk of soup out and vacuum seal that. Works great. I also do my chili, stew and red beans that way... I also used to have these potitioned plactic plates that I found on clearance... I would vacuum seal the entire plate, with the food in each section. Those worked real good as well Chris. 1 lb box of lasagna noodles cooked till just softened
about 4 cups or so of your favorite spaghetti sauce (or buy a couple of jars of something) (with or without meat)
1 large container of riccotta cheese
1 large brick of mozzerella (or a large bag of the already shredded stuff)
grated parmesan cheese[p]in a 13 X 9 pan or casserole dish, thinly spread some of the tomato sauce. . .lay down a layer of the noodles. . .spread about 1/2 the ricotta on that and drizzle some sauce and grate some parmesan. ..then a nother layer of the noodles. ..now a layer of the mozzerella with a drizzle of the sauce and another grate of the parmesan... .another layer of noodles. . ..the rest of the riccotta, more sauce and parmesan . . another layer of noodles . . ..more mozzerella sauce and parmesan. . . .should have enough noodles for one more layer... top with the rest of the sauce (keeps the top layer of noodles from getting 'crispy' and a really good grating of the parmesan. . .[p]either in teh oven or in a clean burning egg at 350 degrees for one hour. .. . . [p][p]fo the chicken noodle casserole, its been a long time, but if i recall, it was a pound of cooked eggnoodles, a couple of cans of cream of chicken soup, one can of cream of mushroom soup and some cut up pre-cooked chicken (i'm thinking some grilled tsunami spin chicken cut up would be great). . ..mix it all together. ..put it in a casserole dish, give a good cover of italian bread crumbs. ..bake at 350 (again in the oven or the egg) for about an hour. ... [p]btw. ...for a good home made mac and cheese. .. . [p]1 pound box of 'elbows' cooked
make a roux (6 tblspns butter, with 6 tapblespoons flour, work into a roux, then add about 3 cups of milk, keep on medium high heat till it starts to thicken). . . add this to the elbows and add a couple of cups of good grated cheese (chedder, guyerre, etc). . . top with italian bread crumbs and once again, bake at 350 for about an hour. . ..

you could go with spawn's meetloaf. . .it's very basic[p]2 lbs ground beef
chopped up onion
2 eggs
about 3/4 cup of italian bread crumbs[p]mix it all up. ..drizzle a little ketchup on top and put it directly on a grid over platessetter at 350 - 375 for about 1 1/2 hours. . ..doesn't get much more basic than that. ..

You hit that recipe right on. Sometimes simple is best. However, let's give this recipe that final comfort food touch. Forget the fresh onion and use a package of Lipton’s dried onion soup mix. I think that is what my Mother-In-Law uses on just about everything. It is not bad.[p]R&J

Nature Boy,[p]Pot pies. chicken, turkey, beef or pork. Easy. just gotta make up a little gravy and use some of the smoked meat you probably got in the fridge with some vegies, premade pie crusts from the supermarket and the little single serving Al pans, also from the supermarket. Freeze them in a zip lock and all she has to do is throw them in the oven at 350 or so for about 45 minutes. My mother won't make a meal for herself very often. You are on to the solution!

1.5 cups selfrising flour
pour into greased dish and bake for 45 min at 350.
this one was wild blueberry icecream[p]
linguica is a mild potuguese sausage that is used in soups instead of andoulle or chourice. chourice is a spiced up linguica

This is a simple soup recipe that me wife makes sometimes just to have on hand.[p]Instant Ranch Potato Soup[p]4 cups Potato Flakes
2 cups Non-Fat Milk Powder
.25 cup Chicken Bullion Granules
1 pgk dried Ranch dressing Mix
1 tsp garlic Powder
.5 tsp Ground Black Pepper
Salt to Taste[p]Makes 6.5 cups of mix.[p]To Make soup: Add .5 cup of mix to 1 cup of boiling water. Mix and Eat
You can top with Cheddar Cheese or Raging River like we do.[p]Hope this helps,

Nature Boy,[p]Don't forget that you can partition off a vacuum bag in the middle and add one portion of different things on each end. They will still be small enough to fit in a large hot water bath or can be microwaved. If she will be eating in the next month, no need to vaccum them either, just seal 'em.[p]Rice, potatos, or noodles with a little liquid on one end, beef tips, chicken & noodles, or a srir fry on the other end. You can see where I'm headed.[p]~thideye~
