Leftover Spatchcock Lemon/Basil Chicken Salad

Every time we cook a whole chicken (pre-egg) there's always some of the chicken that goes to waste.  Found this recipe on Food Network and came out excellent, bride loved it and no leftovers.  Nice smokey taste from the Spatchcock on the Egg.

    Sometimes I cook 1/2 spatchcock for dinner and then smoke the other half for salad. Looks good
    Green egg, dead animal and alcohol. The "Boro".. TN

    That chicken salad looks great!! I get at least 5-6 meals from a spatchcocked chicken. More if I make chicken salad from part of the bird. I usually mix in onion, celery, mayo, dijon, s&p and a squirt of lemon juice. Never thought of the fresh basil. May try that next time.

    I hate it when I go to the kitchen for food and all I find are ingredients!

    Thanks @anton I split the butt in half so it would have more bark and cook sooner.  This is only my second one, but I did the first one this way and liked it so tried it again.
