Just another brisket and ribs................

Has some friends over for the weekend and whipped up some spar ribs and a18+ pound brisket. Started the brisket at midnight and ribs around noon the next day. Trimmed off about 3.25 pounds of day and what not. Rubbed down with EVOO, then heavy coat of homemade rub. Let the egg stabilize at 250 which took some doing as the wind was swirling at 35mph. Used a mix of pecan and peach through out the lump. Wind died down over night and woke up at 430 and the maverick said 142, i knew this was untrue as the brisket was so big I could really clip the probe anyplace. Went outside and dome temp also said 160ish. Pulled out the AR and a nice glowing fire was burning. Put everything back in and replaced the probe positioning. In 20 minutes maverick was reading 286 and dome was 250. Not quite sure what happened but o well. Put ribs on top of the AR

Brisket have up at 192 and about 5pm 17 hours later.

Had an extra spar rib so I tried to do a rolled ribs for experiment. Did them 275 until done on the small.

Ended up with my first center burn and had to give a quick stir and relight, then they shot up to 400 and ended up pulling around 630.

Pretty tasty for a dry rub and a direct grilled carmelization type finish. Other ribs were normal method

Brisket was plated with beans and Mac n cheese.

Burnt ends are like the greatest thing in the world of BBQ.

Lunch this week is doing to be amaze balls!
