1st attempt at Artisan Bread

Made up my own recipe for a Rustic Dried Fig, Pistachio nut, Rosemary, and Thyme Bread. Set it high in the dome for 45 min at 375 used a deflector and a pizza stone. Came out great and delicious. Recommend you try bread if you haven't baked some yet. If I can do it anybody can.

    Did you use a therma pen or go by color?

    The creativity is not all mine. I actually saw the combination of figs and pistachios in a Tom Clancy novel. The bad guy, a terrorist, had bread baked over a wood fire, fresh figs, and pistachios for breakfast. I tasted them together and they were actually really good. The figs are sweet and the pistachios have an earthy flavor. They go very well with savory rosemary and thyme. Heres the recipe:


    3 cups King Arthur Bread Flour

    1 1/2 tsp fine grain sea salt

    1 pkg dry yeast (Fleischman's red package)

    1 tsp dry thyme leaves

    1 tsp dry rosemary leaves

    1/2 cup pistachio nuts (chopped)

    8 oz Dried Mission Figs (chopped)

    1 Tbs Garlic infused olive oil

    12 oz warm water

     

    Method:

     

    I combined all the dry ingredients and mixed them together. I then added the oil and then the warm water. As the dough formed I added the nuts and figs. I kneaded the dough for about 4 minutes folding it over and pushing it down. I let it rise at room temp for a couple hours and then put it in the fridge overnight. Take it out of the fridge and let it come to room temp. work it into a loaf shape and punch it down. let it rise. and they bake at 375 for 45 mins or so. It was 190 IT when I pulled it. 

     

  • I use a dutch oven both covered and uncovered in my Egg all the time. But I have never baked bread in one, how is it different from my result?
