Tonight's dinner.......souped up chicken Alfredo

Ok so I'm cooking a chicken Alfredo for dinner tonight with a Caesar Salad. The Alfredo is made with heavy cream, white wine, Asiago and fontinella cheeses. I cook the mushrooms in white wine, butter and bacon fat with some onion and garlic. I then add the shrimp after the mushrooms have cooked for a while. I marinaded the chicken breasts in EVOO, thyme, basil, salt and pepper over night then cooked on the egg. After the chicken rests I slice it about a quarter inch. I crumble the bacon and then assemble. First goes the penne, then the chicken, then the bacon, the mushrooms and shrimp, then the sauce. Last I grate some fresh Parmesan cheese on top and bake until it bubbles and the top becomes a little crunchy. The wife made a kick ass salad too!

@Wolfpack I heat the heavy cream until it just starts to boil then back the heat down. I then add some white wine and chopped basil. I simmer it until the chicken is cooked. While the chicken rests I gradually add the cheese and stir constantly until the cheese is melted.
