Pork Chops.  How I do it.

Take the time to marinate your center-cut pork chops overnight.  Remember to enhance the marinating by scoring/gashing.

Next day, let the rub sit for a coupla hours.

Man can not live by chops alone, so remember to smoke some

'Baby Dutch Yellow Potatoes' done up Hasselback style and wrapped in bacon.
