Indian Chicken WingsIngredients1 cup heavy cream1 tablespoon store-bought ginger-garlic paste1/2 teaspoon ground turmeric1/2 teaspoon ground cumin1 1/2 teaspoon ground coriander2 teaspoons red chile flakes2 tablespoons fresh lemon juice1 1/2 teaspoons dried fenugreek leaves, crushed1 teaspoon dried mango powder2 tablespoons vegetable oil1 1/2 teaspoons table salt1/4 teaspoon freshly ground black pepper2 1/2 pounds chicken wings (about 20 wings), tips cut offNonstick cooking sprayStore-bought chaat masala, for garnish*Corn starch (sprinkle on wings to make them crispy)Procedure1. In a large bowl, combine the cream, ginger-garlic paste, turmeric, cumin, coriander, chile flakes, lemon juice,fenugreek, mango powder, vegetable oil, salt, and pepper.2. Add the chicken wings and toss to thoroughly coat them. Refrigerate, covered, for at least 3 hours.3. Set up BGE for indirect cooking with platesetter and get temperature upto 375-4004. Take your cooking grid out and spray with Non-stick cooking spray like PAM. Sprinkle the marinated wings with corn starch. Place the wings on the cooking grid.5. Cook the wings at the felt level with BGE lid closed for about approximately 22 minutes. Turn the wings once and cook for another 20 minutes.6. We just love shiracha wings. Its a pretty popular recipe.
Cup of honey
Cup of siracha
Cup of brown sugar
Simmer it to break the sugar up.
Cook wings 350 indirect for 1 hr, then coat one side in the sauce, cook 15 mins, flip and coat the another cook for last 15 mins and done. Absolutely awesome wings! -

Marinade
3 cloves garlic, crushed
1 tablespoon of chili powder (15ml)
1 tablespoon of chili flakes (15ml)
2 teaspoons paprika (10ml)
2 tablespoons sugar (30ml)
3 limes, segmented
Salt and pepper to tastePlace the cleaned chicken wings in a plastic sealable bag. In a medium bowl, combine the above marinade ingredients and mix well.
Pour the marinade over the chicken wings and seal the baggie, ensuring the chicken is evenly coated. Let marinate in the refrigerator for 5 hours.

If you like simple and tasty, try overnight marinade in 50/50 mixture of soy sauce and OJ. Cook indirect at 400 for about an hour.I raise the grid and get crispy wings. The soy brines the wings and the OJ gives a nice crust.
