Thanks everyone, it was really good, I'm going to be working with some other combos around this as well.@Legume I just had plated slices, some put it on buns like a burger with toppings, etc. Not sure there is a wrong way to eat this.

@bo_mull - Roasted butternut squash is one of my favorites, and really easy. Basically just let it go until it is tender, then remove it and scoop out the "meat" and mix it all together. Lots of different flavors that work well.

There was one lonely vine ripened jalapeno hanging on that was not going to make it overnight (first real cold night of the season), so I tossed it on to smoke:

Obviously a tune-up for that pending SRF adventure.Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

@DMW-you are several orders of magnitude better at capturing and documenting your cooks. That said, not speaking for the forum but just the finish temp/or feel and your overall thoughts on the SRF banquet you are about to offer to your co-workers would suffice. I'm sure you will go into much greater detail and would encourage your candid take on the whole deal. And I agree, their new shipping policy is quite enticing. Looking forward to the thread. @DMW what temp did you go with on the fatty? About how long did it take? I'm assuming you did it indirect. I just rolled one up that I'm gonna throw on the egg later. Thanks

@shtgunal3 Indirect around 250* for most of the cook. I had to bump it up to 325* to hit my finish time. About 2.5 hours, took it to 165* internal.They/Them
