Chicken marsala ballotine! First ballotine for me (pic to satisfy)

I really wanted to try a ballotine and I couldn't get out of my head a chicken marsala ballotine. I watched good ole Jaques' video and I was pretty happy with my first shot. It took me about 15 to 20 minutes to do.
I sauted some shitaki and baby bella mushrooms and added some shallots and garlic. I also added a touch of marsala wine, though I will be making a sauce separately. I stuffed the chicken with a bit if basil that was going to go bad and the mushroom mixture and trussed up the bird. I sprinkled some tsunami spin on the skin and popped it in the fridge until I'm ready to throw it in. I tried the lollipop thing. First one needed some help, second one turned out descent. I'm pretty happy for my first time doing this... Off to prep the rest of dinner.

Most eggcellent-my first took a good 25-30 mins with a lot of rewinds. You are gonna really enjoy the end results. Opens a whole new chicken option!Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

Thanks guys. Not sure how I'm going to do the sauce. I think I'm going to cook the chicken in the ceramic dish and when I let it rest I'll deglaze the dish with the marsala and add some chicken stock. I have two portebella shrooms in the fridge left over. I'll probably cut those up too, though that'll be an end result of a lot of shrooms.Dunedin, FL

So, things aren't going too well on the cook side. The egg temp got way too high and the edges cooked way way before internal. I had resorted to pulling and splitting the bird, wrapping in foil to help it cook. So presentation is out the window but hopefully the bird will be salvaged. Here is a pic when I pulled it.

Well it turned out really good despite the temp issue. I had stuffed so much food in the egg that I think things just got a bit out of control especially with my lack of attention. Brussel sprouts got burned but still edible after peeling off a layer. Potatoes turned out a little undercooked too. All in all the marsala chicken balontine was really good and I will definitely do it again.
