corned beef question

I am going to try Malcom Reed's corned beef on the egg http://www.youtube.com/watch?v=uAPd79VFJP4 . 

He does not soak it first. He smokes, then braises. I am worried it might be too salty. Has anyone egged a corned beef brisket without soaking it first? If so, was it too salty?

    I've done it several times, I usually just rinse but it does come out a bit salty for some. If you're sensitive to it I'd soak.

    In the video, he takes 4 lbs of corned beef and adds a gallon of water and a bunch of potatoes, onions and carrots, then essentially boils it on the grill.  I wouldn't call that braising.  The net effect is he's drawing salt out of the brisket into the vegetables and pours out most of the water (throwing out a lot of salt with it).

    In summary, he's basically doing the boiled corned beef process, but on the grill after smoking the meat a couple of hours.   You don't need to soak in this case.

    I soaked for about only 12 hours once and it was still too salty for our tastes but admittedly we prefer less sodium than most.

  • Thanks for the input. I will go ahead and soak it. I would rather have too little salt than too much.

    If you follow that video recipe, I would not soak...I would skip the seasoned salt he adds to the meat and just make it seasoning.  When you soak it you don't only pull out salt, you pull out seasoning. 

    That said, you can soak and go for low sodium.  You can always add more salt.  But like I said, this is the same recipe as boiled corned beef, except he's calling it braising and doing it on a smoker.
