delivery question

Delivering pulled pork today. It will be in ftc mode but I'd really like to have it pulled when delivered. Could I just pull, foil in pan, warm in oven for a while and then ftc? The ribs will be delivered in racks. They can cut those.

    I'd add moisture if you are going to pull and reheat in anything but a vacuum bag. It always drys out for me so I typically supplement with sauce prior to wrapping after pulling.
  • How long are you going to need them in foil before you deliver it?

    I did pulled pork the other weekend for a concert tailgate. Pulled and vac sealed, then into a cooler filled with 200 degree water. Five hours later, meat was still at 165. Just pulled out a bag, cut it open and served.

    Basically I could pull it right before leaving while it's hot, foil in a pan and back to ftc. I'm delivery boy about 3 but they may not eat till ...? I guess I can let them pull it.
