I did these last weekend as part of "Spanish night" and they were such a hit I had to do them again this weekend for company.
Super easy: toss Padron peppers with EVOO, cook in pan until wilted, toss in some chopped up prosciutto a and cook about another two minutes. Remove to a serving dish, add salt and fresh mint.
At least in Austin, Central Market has Padron peppers.
