Ok, So whole foods only has little chuck roast 2lbers... If I do two chucks till 165 at 250 then foil till 205-210.... Ball park figure of time? Will it still be around 1.5hrs a pound?

Here's a link to a great pulled beef recipe-I do not go thru the sauce drill but the chuckie cooking plan is great: http://dizzypigbbq.com/portfolio/clays-pulled-beef-by-clay-roberts/ For your chuckies I would figure around 5 hours or so total cooking time but that can vary by each hunk. Just give yourself plenty of time.
