BIG fan here! Go HOT or go home. I'm pumped up to get our annual case of "Hatch Goodness" tomorrow morning. The grocery stores around here make a big deal this time of the year, celebrating the Hatch season. They go all out with the roasters tumbling out front by the entrance of the store. I can already smell it and it's making me hungry!!!XLBGE, SS tableMcKinney, TX.

Had to post a pic I had saved as a reminder. We stuff them with a sausage/cream cheese mix and cover with shredded Colby Jack. Eat as is, or wrap in a nice, soft, warm tortilla... Phenomenal!XLBGE, SS tableMcKinney, TX.

Both work fine.I was going to suggest roasting them a bit longer (so most or all of the skin is black) to make peeling easier, but if you've already peeled them and had no problems, great!
