How long can food keep?

Or really, what keeps longer. Uncooked vac sealed frozen meat? Or cooked vac sealed frozen meat?

Vac sealed frozen will keep longer due to the elimination of free air. I usually go 2x longer than recommended with regular stuff. Vac sealed 4-5x longer.

Recommended storage time for uncooked is longer than for cooked. The FDA says "Because freezing 0° F (-18° C) keeps food safe indefinitely, the following recommended storage times are for quality only."  My experience is that things keep well for a long time in vacuum sealed storage bags.

In cooking, often we implement steps for which we have no explanations other than ‘that’s what everybody else does’ or ‘that’s what I have been told.’  Dare to think for yourself.
