Run Away Butts

This is a first for me. Two butts rolling along @ 235 for 10 hours then hit a 75 degree drop. Check it out and had a burn out. Gaping hole in the middle of the lump pile. Stirred it up moved it around and now climbing to over 285 with all the doors closed. No sleep tonight.

    Thanks @Fred19Flintstone It was tough not taking a pinch before I FTC'd them.

     I use the HD shipping cooler from Omaha Steaks for FTC and it is stuffed to the top with these.

    They should hold till lunch and we will make our Baja Wave Tequila Lime Tacos for 150 guests.

    Good save on the butts @Hotch‌. The Baja Wave Tequila Lime Tacos sound great. If you don't mind sharing, what all goes in them? Also, how did you keep the butts that light color?

    @stemc33 Lately I have been buying butts fresh cut from my butcher. They are ruby red in color. Not a pale off color like in a cryovac pack. And Texas rub of Kosher Salt and Malabar Black Pepper.

    It's not bad, but drive to town is much better.

    I was stationed in San Antonio when I was in the Army and the thing I remember most was the pride Texans have with the state. Wyoming pride is great, but nothing compared to Texans. Maybe Texas pride just stands out more because of the population. San Antonio's population itself is nearly 3x the population of WY.

    @Hotch I haven't experienced the "lump hole" before but I have read on here that it has happened to people other people even with a pit controller.  Just my $.02 but I think this might be when you have too many large pieces and the fire runs out of fuel because there is a gap. 

    Your Baja Wave tacos are bookmarked- the recipe sounds excellent.  Can you taste the tequila in these?  I'm just wondering because my wife hates tequila.

    @SmokeyPitt These little guys are a punch of dozen flavors all at one time.  I do not believe you will get a bold Tequila hit, just a note.


    @Durangler The Tequila I used is great for cooking, not much for sipping, I agree.
