I have not been very successfull with turkeys in the past on my large BGE, though most of my other cooks have always turned out very well. This year I decided to try a spatchcocked 14+ lb. turkey and it turned out PERFECT! Cooked it indirect with a pan of water beneath it and pecan wood for smoke. The cook took just less than three hours. I tented it with foil after two hours when the skin was nice a golden brown. The bird looked beautiful, smelled wonderful and tasted great. Nice light smoke flavor and very moist.

I forgot to mention that I cooked the bird at 325° for the first two hours and then slowly raised temp to 350° for the final 45-50 minutes after tenting with foil.

SteveO,
Glad to hear it worked out well for you. All good things come to those who wait.
