Sam's Member's Mark Angus Ribeye Steak (primal)

Just bought a 14.5 lb. whole primal ribeye from Sam's. It was $8.97/lb. Since it was Certified Angus Beef with good marbling, I decided to go for it. The primal had a 2" lip on it so I asked the butcher if he'd go ahead and cut it into 1 1/4" steaks. He said sure thing so we went and picked up a few more items while he got it ready.

Came back to pick it up and he had been able to get 10 nicely trimmed ribeye's out of the primal cut. The best news of this was that they were re-weighed so what we expected to be $130 was actually $92. All the waste from the lip etc. we didn't have to pay for. The same steaks pre-cut and packaged for sale were almost $2 more per pound.

So, it certainly is a much better deal to have them cut and re-weigh in the store instead of just taking it home and cutting it yourself unless some useful way to use the trimmings of fat etc.

I'd like to hear any comments regarding this cut of beef from Sam's. It's our first time to buy whole primal from Sam's. Thanks.
