6lbs of almonds on

Put on 6 lbs of almonds this afternoon. I'm using the Amaze N Pellet Smoker with Traeger hickory pellets. Since this is my first go at smoking almonds, I decided to try three flavors to see what we like best: 3 lbs of the recipe from Charcuterie, 2 lbs of rosemary, sea salt, and black pepper, and 1 lb of Jamaican Firewalk from a sample of Dizzy Pig I had lying around. Looking forward to the results!

This is a cold smoke. The amazing pellet smoker is designed to put off a lot of smoke without much heat. The thermometer on the egg isn't even registering 100F. Some of them I'm going to pull around 3 hrs, the rest I'm going to leave for 5 I think. -
Jcacavias ... throw a couple chunks of cheese on there after you pull your first batch. After 1.5 hours of cheese smoking, pull the cheese, counter it for an hour, ziplock or vacuum seal and refrigerate for a week.
