Pete,[p]I am addicted to center-cut bone-in pork chops. I get them 1.5-2.0 inches thick, brush with a little olive oil and apply a liberal dousing of Dizzy Pig Tsunami Spin.
T-rex these and you will be astounded at the results.[p]As a testament to how good these come out, my wife, who normally eats very little and tries to act very proper at the dinner table (often yelling at me about this) inevitably ends up picking up the chop and eating what's left on the bone with her bare hands. It is like a scene from Quest for Fire, absolutely hilarious.
