Fathers Day is now Wing Day

I've read multiple posts on here about wings and decided to try them out for myself for the first time tonight. I coated them with a 2:1 mix of Dizzy Dust and corn starch. Cooked at 375 raised direct for about 20 minutes then coated them with one of three sauces: Franks Hot Buffalo, lemon pepper, and my standard barbecue sauce. A few minutes to firm up the sauce and they were done.

They turned out awesome. Mostly crispy skin and just the right amount of firmness/char in the sauce. Next time I'll probably light the fire in more than one place since I had a bit of an issue with hot spots at the beginning. Eventually the fire evened out but I had to do more rearranging than I would've preferred this time.

Thanks for the inspiration to give wings a try. They were a great ending to a great Father's Day with the kids.

    Those wings look great.  I love them on the egg.   I haven't used cornstarch on them before.  What does that do?

    On the charcoal, I'm not sure how you light it, but once you get a little pile lit, just stir the charcoal around to spread out the goodness, close the lid, and they should even out by the time you are ready to grill.

    It helps to dry out the skin and make it crispier when it cooks.  I believe that some people use baking powder for similar reasons.

    Good call on stirring up the charcoal for direct cooks.
