8# Brisky Flat is on. Stoker set for 245℉ Pit. After getting cleaned up from yesterday's Father Son Day I began prep. On this flat I have injected with apple juice, applied a generous amount of a rub (my recipe that I've modified a little) and then wrapped and placed back in the frig overnight. Brisky is on LBGE. Setup»»»PS legs up with a layer of foil on PS to keep it clean & NO drip pan. Using WGWW with Pecan & Black Cherry chunks for smoke. I'll post finishing pull pics, slicing and plating later. Haven't decided on sides as of now.

@henapple Why yes I did. This is a high temp product made by Rutland. Helps keep rain etc from going down thru the penetration. I've done several high temp Pizza cooks and one clean burn with no issues. Looks good man. I think caulking that seam is brilliant. As long as you have a little expansion gap, which I know you do, that keeps it clean looking, and, as you said, water and funk from spooging down the inside of the egg and shelf.
If you have to pull it out for any reason, it should clean up from stainless easily with a razor blade and probably pull off the green ceramic in a bead.

The Brisket looks good but I am really impressed by how neat and clean everything looks....I won't be showing pictures of my set up....as a side note, I traveled all over the south and I rarely stopped at a BBQ joint that were clean and wood stacked neatly. I felt this to be way too commercial....yours looks so good it' s got me rethinking about my set up Both my sons are getting getting rid of their wooden tables for their XL's and replacing them with one of the new metal types

@SkinnyV I have gone w/ and w/out injection on my "Flats". I think it helps a lil bit with moisture and only because a flat is simply much more lean than a packer. The rub I'm using has been simplified from 16 ingredients down to 7 and I think it tastes much better. @thailandjohn thank you! The cleanup is a quick painless process and I clean as I go so it doesn't get a buildup of gunk. And to be fair SS is fairly easy to keep clean without much effort.

Consider injecting late in the cook. Melted butter and/or gelatin would be ideal in a flat, they're often very lean.

With PVC fittings and silicone to protect the Stoker. It is watertight. In fact it is pouring out right now. Seems that each time I do L&S it rains at least once (I'm okay with the rain). The NW gets rain. Here in FL you can bet on a shower or two almost daily this time of year.

I pulled brisky at 200℉ IT like buttuh everywhere I probed. Made some corn on the cob and baked beans. This according to the family was the best one yet. Used my new knife for the first time today on the slicing. Also for Father's Day my wife got me (well us) all new dinnerware. This was an awesome Father's Day! Hope y'all enjoyed yours as well :-)

Excellent play by play. Well done. My son ordered me a brisket from the butcher, but cancelled it after he realized I would be working a bunch this week. He told me was looking through the forum for ideas(could be a future EGGhead). Gotta love it when they think about giving you a gift that fills their belly.Steven
