pork butt timing fail

I had an 8lb butt and put it on at 5am this morning for a 5 pm serve time. I have always had 1.5 hours per lb. guests are coming in 25 minutes and we are eating an hour later. Had to pull some out of the freezer and keep cooking this butt for later. its been on for 10 hours and is only at 165F. i actually thought t one time id be done too early, it was even up to 172, then fell through the stall and has been there for a couple of hours now. Oh well.

Foil and crank the temp 50-75 degrees...... It'll heat up fast....

Cant crank it up as I also have 4 racks of ribs on too. I had the dome at 260 like i always have done The ribs are coming along just perfectly.

My last two butts (8lbs) have cooked at 250'ish and were right around 12-13 hours. The last one I bumped at 1am to 300 to finish because I was driving the family and pulling a trailer that day.Bristow Virginia XL&Mini One of the best feelings in life is watching other people enjoy the food I cooked!

From unfrozen it takes me 12 hours @ 260F, I would add another 2 hours for frozen

We'll it took until 7 pm to get up to temp. I was still moist and very flavourful. Best bark I've have gotten to date. For whatever reason why this one took me the extra 2 hours I don't know as we all know they have a mind of their own.

Honda, when I first got my WSM every pork butt I made turned to gold at about 1.5hrs per pound. at 225 degrees. I got cocky and was having people over and decided a remote read thermometer was unnecessary as all my previous cooks were perfect. Everyone showed up. Went to pull the meat and it wouldn't pull and it wasn't done. That's when I explained to my guests when they see "chopped pork" on a menu instead of pulled pork LOL......Taste was still great and everyone loved it except me.Dearborn MI

Well I always use my maverick so I didn't have the cocky issue today. Just chalking it up to one of those things.
