Stoked For My First Butt

I figure 3 firsts in one cook is plenty. This is the first time using my WiFi Stoker. First Boston Butt period (this one just so happens to be a 7.8# bone in). Lastly this is my first time trying Mickeys Coffee Rub. I have NO RUSH today so I'm just rolling 225℉ or so for nice L&S. Using WGWW and a some mesquite chunks. I'll update with more pics as I go with the cook.imageimage

    Be interesting to see how the mesquite and coffee rub work out. Never would have considered either. W.ell, maybe the rub. :)

    Just lost power and boom my automatic standby generator is humming right along. Butt showing IT of 101℉ and Pit at 228℉. @DMW‌ ya I've never done a bone in or out butt. Also haven't done a pork loin. I decided on the butt today.

    Fun stuff. What's your estimated eating time? Are you wrapping up or gonna egg that butt bare all the way to the finish? Probably won't be a lot of pics during the cook with the new equipment unless your a peeker. With the energy in your post, the temptation to peek seems like your gonna have to fight the temptation.

    Yes, she does! :-D But, SWMBO doesn't eat Pork whatsoever. She and some girlfriends look a trip to see the giant rat in Orlando. So, here I am cooking something new. Gotta say the Stoker is kicking out perfectly. Thankful I made my waterproof enclosure before the cook. Right as the power was lost, the generator kicked on 20 sec later to restore power and then the boomers and rain rolled in. Kept the unit dry and didn't skip a beat. And the lid hasn't opened for a peek yet. Bumped pit to 240℉ and butt is at 140℉. imageimageimage

    Nope. It was late, it was cold and I was hungry. One half was done while the other wasn't (happens sometimes). I grabbed half and took it inside to pull. After dinner, I took the other half off.

    They do stall but with a temp of 325 it should push thru. Turbo's are done at 350 so you can bump it up even more if you wanted.

    @grege345‌ thanks. Bumped 350℉. I figure it rolled at 225℉ for roughly 7-8 hrs and I've been progressively been bumping up to the current of 350 Pit and BB IT is now at 156℉

    @Carolina Q‌ yep late a supper indeed. My title was obviously aimed for witty toward my Stoker and new to Butts :-). And yes "a butt virgin" does sound wrong. But, this is my 1st :-)

    This is why I go turbo. 350 the whole way. Great bark, great smoke, and in so much less time. Did a 9lb today in 6.5 hrs.

    Arguments both ways. Some prefer the traditional lo n slo and claim there is no substitute. Others say they can't tell the diff and prefer to be able to sleep through the night. I've only done one turbo. Thought it was a bit dry, but I had temp control problems and was mostly closer to 400° than 350. I'll give it another shot I guess.

    @stemc33‌ Nope "I'm" not in a RUSH. But, I'm trying to serve pretty soon as my Son has work in AM & my Mother is hungry. So just trying to appease. That's all. Just got done playing a couple games of pool with my Son on the lanai. Just truly enjoying this day. :-)

    I put a butt on last nite. I woke up at 6 and it was at 141 degrees. Went back to bed and at 8 it was at 147 and it satayed that way till 9:30 am. It finally starting creeping up and it reached 192 before dropping to 188. I finally wrapped that **** up to the finish line. Wanted to go unwrapped the whole way through.

    What temp should I pull the Butt out? I figured 195℉-205℉ or when I could slide the bone outta the butt with no resistance. ???

    I pulled mine at 203 and left it in the foil to rest and when I unwrapped it to pull, the bone slid right out.

    I've only ever gone turbo. I look at it this way, it is already the best hunk o' butt I've ever had, and it only takes 6hs instead of overnight. I just don't see a reason to go low and slow. I get the purists, but it's just so good.

    One of the biggest potential downsides of turbo I've heard is less than adequate bark. I'd have to disagree as the bark on a turbo butt is awesome.
