Cooking specifically for "leftovers": What and how to do it?
What do you do, and how do you do it? Why I am asking? Specifically, these meals are to be eaten on a boat. I go down to the boat on most weekends, and many times we go on long and overnight/over weekend trips. We often have 4-8 people onboard. I am looking for ideas for quick simple and delicious meals on the boat that are freezable and "flexible".
In the past, I brought down “fresh” meals (not frozen). This year, I want to be more flexible and freeze things, because if we end up catching fish, we will often cook it while still out on the water. For instance, I am going to cook 4 pork butts pull them and vacuum seal them in bags for four people since I am not going down this weekend. Pulled pork is (relatively) excellent leftover, can be eaten with or without a roll.
I am looking to glean other ideas that I might be able to do
during the week or whenever I have the time for later consumption.
Things to keep in mind:
- We have a 2 burner stove, a grill that (is only used when offshore and waves are < 2 foot), and a microwave onboard.
- We are often rocking, so anything that rolls around can be a challenge (drumbsticks until half eaten, soups etc…) in anything > 3 foot waves.
You all have great ideas on new/fresh and interesting meals, I though I would ask about best meals to be intended to be eaten as leftovers.

Chicken breasts, split and filled with whatever you like - ham and cheese, spinach and feta, bacon and garlic etc. Lamb chops in various sauces can be reheated in a vacuum or Ziploc bag in boiling water.Stews, like chicken or something light for summer,too can be loaded into bags and reheated the same way or in the nuke.Mac and cheese comes to mind. Lasagna, or any pasta so long as it's not overcooked in the first place.

I think brisket reheats very nicely in a microwave. We almost always freeze a brisket chunk when I cook one.

smoked ham freezes well, dont know about meatloaf freezing but i eat alot of meatloaf sandwiches out on the boat
fukahwee maineyou can lead a fish to water but you can not make him drink it -

Homemade sloppy joe freezes and repeats well.
