Great Turkey Despite Technical Difficulties

Thanks Max for the great turkey method. I did have some problems, but it turned out really well anyway. my pizza stone broke but I was initally able to use two large pieces to set my trivet and pan on. Unfortunately, that created some hot spots and I kept having to add liquid. Then I began to have trouble keeping the temp up and end up the last hour in the oven. But it was great, the gravy was the best ever. And if you haven't tried Giada's ciabatta chestnut dressing-Wow! It converted this cornbread purist!

wow. . .sounds like you had some fun, but made it all work anyway. ...and yep, that ciabata stuffing is something special. . .everybody at my table just raved over it. . ..

crkscrw,[p]I ended up not making it. I had most of the ingredients but the only pancetta I could fine was sliced extremely thing and was almost 100% fat. :( What kind did you use?[p]Gwen
