I pulled it at 1:30 at 196°. Its tender and moist the point was separating from the flat. I tried to cut the point off to make burnt ends, but went the wrong way. No one will care. I did a night cook with any Guru or fan. I just set it at about 230° and only went up 30°.

I put the brisket fat side down and the fat just melted down into the dutch oven. Now I did have to suck the fat off the top with a turkey baster. I took off 2 cups of liquid fat. The rest I mixed in. I used 4 5/8" aluminum spacers under the dutch oven To create an air gap so they wouldn't burn. The beans were awesome and so was the brisket. Here are some pics. I think I went a little over on temp, the point was more like shredded beef and the flat was a little dry, but tasted good. Next time I will put the probe more in the flat.
