    Lo 'n' slo is OUT! No fat on most wild animals. Cook it fairly hot and maybe a little to the well done side . . . not all the way but close. Drape a little good bacon over the roast and shoulder to add fat and help to keep it from drying out. Good luck.

  • derek eudy, I agree with Sundown on the tenderloin - fast. The roast can go slow if you marinate. I marinate for 2 weeks in jack daniels and beer for two weeks !!!. I think I sent Mad Max the recipe around the end of September. if u can't find it send me an email and I'll send it again. As u can see I'm not on all time, so an email might be better.[p]Joe
