I discovered the nibble me this website today and I have to say right now it seems to be the holly grail of egging recipe sites for me. I was browsing at work today when I stumbled upon his competition chicken thighs. It pretty much side tracked my whole day cause it was all I could think about.
Ran to the store after work and picked up some chicken thighs and went through his whole prep of trimming, scraping, and wrapping. After going through it all i'd say it was pretty well worth it. Chicken fat might be one of the nastiest things ever and I have a whole new hatred for it. I don't know if i'll ever have another thigh without going through this process.
SWMBO was out of town so there was no need for sides or other distractions, so I sat on the back porch with my plate of chicken ribs and made a mess of myself. Thanks Chris!

The only problem with his recipes is he is sponsored by a good number of folks and uses name brands without describing exactly the flavor profile. Hard to compensate in some cases.*******Owner of a large and a beloved mini in Philadelphia
