Turbo Butt Temp

What temp do you folks pull your turbo butt and how long do you let it rest. Foil or no foil? Cheers

    Pull around 197-200 IT but mainly when it probes like buttah. Foil only if you are goin to FTC for a while otherwise on the counter is fine.

    @ AUQUACOP.....I'm 3 hrs in on my 8.5#'er. Cooking at 330 Dome temp and I am at 172 IT right now. Indirect raised. ( raised only because I have a brisket on the lower rack). Planning on pulling off the egg at 200 IT.

    When do you guys pull if there is a gradient in the meat temp - some places reading 200, others 185. Do you wait until the coldest section hits 200 without concern that the higher section will overlook?

    You pull once you can wiggle the bone free or you probe it and it feels like buttah
