What temp do you folks pull your turbo butt and how long do you let it rest. Foil or no foil? Cheers

Pull around 197-200 IT but mainly when it probes like buttah. Foil only if you are goin to FTC for a while otherwise on the counter is fine.-----------------------------------------analyze adapt overcome2008 -Large BGE. 2013- Small BGE and 2015 - Mini. Henderson, Ky.

@ AUQUACOP.....I'm 3 hrs in on my 8.5#'er. Cooking at 330 Dome temp and I am at 172 IT right now. Indirect raised. ( raised only because I have a brisket on the lower rack). Planning on pulling off the egg at 200 IT.Enjoy !!!!!!

When do you guys pull if there is a gradient in the meat temp - some places reading 200, others 185. Do you wait until the coldest section hits 200 without concern that the higher section will overlook?
