I have two real prime expensive filets. How should I cook tonight? Egg at 600 rt now.

How'd they turn out? Reverse sear or hot tub is the way to go...

I personally would sear each side about 3.5 mins turning 45degrees half way through the 3.5 and then flip and repeat. I did a couple last week and they turned out amazing... best filet i've had...Demorest, Ga. 1MBGE

For Medium...Raised grid 375F until med rare, rest, c.i. pan 650F-800F and sear 1.5-2min per side and roll the sides for sear. I used this method on (4) 2" beef tenderloins and turned out perfect with nice sear/crust.
