I have been keeping regular track of hourly temps of my turbo butt cooks and have yet to notice any significant pausing like a normal plateau - my gut tells me with the higher heat throughout the cook it just is gradual and a non-event. Sorry I was in a meat coma !!
So they came out amazing !!
5.5 hours at 350 ( ftc'd for 3 hours ) and the bark was perfect and so was the meat .
Pulled perfectly and not dry at all .
oh and the baked beans that accompanied the pork was phenomenal as well
