How long to defrost a 16# brisket?

Got a 16# be brisket in the freezer. Wondering if anyone knows about how many days in the fridge that'll take? Or is it OK to put on the egg partially frozen? I've done that with pork shoulders but don't want to experiment with a hunk of brisket.

It depends on your fridge temp but you can do it partially frozen. It will take a bit longer.

I would say just pull it out about 3-4 days before you want to start cooking it. I would treat it like thawing a turkey.Just a hack that makes some $hitty BBQ....

If it's in cryovac you can finish the thaw in cold water overnight. The water will stabilise the temp so that the centre won't be colder than the surrounding medium.

The rule of thumb according to the FDA is 24 hours for every 5 lbs... That'd be a little over 3 days for your 16 lb brisky. Source: http://www.fsis.usda.gov/wps/wcm/connect/09091ea3-84d6-4b83-a04e-5123713fe406/Big_Thaw.pdf?MOD=AJPERESXL BGE + Large BGE @ Monterrey, Mexico

I will typically pull mine from the freezer & place in the refrigerator 3-4 days before I want to prep the brisket. I prep mine the day before I smoke it so essentially 5 days in a refrigerator. In a pinch you can run cool water to defrost but , I prefer to do the refrigerator method personally.LBGE 2013 & MM 2014Die Hard HUSKER & BRONCO FANFlying Low & Slow in "Da Burg" FL
