Indian keema (ground lamb) nachos from Salado

This is what I cooked this year. Figured that everyone knows what nachos are. The pita chips are supposed to represent naans, and the sauce is supposed to be raita. So, you have an Indian meal masquerading as a Mexican snack!

I cooked on my large Tuff Guy, which is basically a raised griddle with a rim around it. A DO would work fine (better even). You can cook half the recipe if you like. 

Keema:
Dome temp: 350°F

In 2 TBSP oil fry...
Cumin seeds               1-2 TBSP
Cloves                10
Peppercorns      10
Bay leaf               3 
Cinnamon           2 sticks

...until aromatic and the cumin seeds turn slightly dark, but don't burn. 

Add:
Ground lamb      4 lbs
 
Brown the meat. 


Add:
Red onion, chopped  2 (baseball size)
Ginger paste      1 TBSP
Garlic paste       1 TBSP
Salt                   1 tsp (or to taste)
Cayenne            1 tsp (or to taste - for this amount of meat, I would usually add 2 tsp)
Sugar 1 tsp

Saute until the ginger, garlic, and onions are cooked.

Add:
Tomato sauce      4oz (or 1-2 chopped fresh tomatoes)

Saute until the tomato sauce is cooked and darkens. You shouldn't really be able to see it separate from the meat.

Add:
Peas              1 small bag

Saute some more until the peas are cooked. Garnish with chopped cilantro, some fresh cracked pepper, and a dash of powdered cinnamon. 


Raita:
In a food processor, pulse until finely chopped:
Cilantro      2 handfuls
Mint leaves    1 handful
Garlic, peeled        1 bulb/head
Thai chiles           4-5 (or to taste)

Add:
Fage Greek yogurt     2ish lbs
Cucumber           1 large
Salt  to taste
Sugar     1-2tsp

Pulse again until all ingredients are thoroughly mixed.




Serve with naans or rice, with the raita on the side.  At the fest, I served it with a pita chip, keema, raita, and cilantro garnish. I was too busy drinking @henapple's PBR to remember to take pics.

    @caliking - do not forget the wings you cooked on Saturday. Personally thought they were the  best wings of the day which is a high bar since all of the wings at the Fest were super.
