Good call on the brats. The wife had a craving for them last week. She went to the grocery store and the butcher didn't have any brat specials. Usually you can find jalapeño cheese, wild rice, tomato garlic, etc. but still a little early I guess. So we went with originals. I can't take any credit with the cook. She was determined to grill brats on the egg herself. More power to her. My wife's best friend lives in Tennessee and her dad is a egghead and also a forum member on both sites. A few months ago my wife went down to visit her friend in Tennessee and she brought some Blues Hog with for her dad since they can't purchase it locally. A few weeks later we find a box on our front steps from Tennessee. Her Dad sent us a bottle of Tennessee Hot Chow Chow relish. Wow is that ever good! If you like hot and relish it's a must try. (Thanks John!) Topped with some Uncle Petes mustard and assisted with a cold frosty. I think I caught the summer fever after that meal. Nothing like a good spring brat!"The pig is an amazing animal. Sounds delish @WeberWho? is that relish like bomba or like a spicy pickle relish? Have you ever been up to Grunhofers in Hugo. They have like 50 different kinds of brats. The local butcher has half a dozen different types and are so much less greasy then commercial brats. They also use high temp cheese so it doesn't all boil out while grilling.

Around these parts, spring seems to be a bit of a fantasy. We still have a couple of feet of snow on the ground and freezing rain is on the horizon.

@Brisket_Fanatic - have you ever had the skinless brats from Tiefenthaler Quality Meats in Holstein? I used to live in that area and I really miss their brats. Jalapeño and cheddar are my favorites. Haven't had them in years (well before my time with the BGE). I don't know what they use to hold them together but they're fantastic. I need to find out if they ship. Making me hungry now.I'm going to have to find the place in Hugo. Thanks for the recommendation.L x2, M, S, Mini and a Blackstone 36. She says I have enough now....eggAddict from MN!

@minniemoh I have heard of them but never tried them. Family that owns the locker in Alton are friends so I buy most of my meat from them. They also have some skinless stuff and I enjoy them better than traditional brats.
